A Visit to Lyburn Cheese Farm
At Cobbs Farm Shops, we're passionate about championing exceptional local producers, so we were delighted to have the opportunity to visit Lyburn Cheese Farm and gain a fascinating behind-the-scenes insight into the craftsmanship that goes into producing their award-winning cheeses.
Nestled in the beautiful Hampshire countryside, Lyburn Cheese Farm has been producing outstanding artisan cheeses for decades, combining traditional methods with a deep commitment to quality. Our visit provided a wonderful opportunity to learn more about the farm's history, meet the people behind the cheeses, and discover the journey from field to finished product.
Our day began with a warm welcome from Mike, who shared the story of the farm and its family heritage.
His passion for cheesemaking and dedication to preserving traditional farming practices was evident throughout his presentation. Learning about the farm's evolution over the years gave us a real appreciation for the care, expertise, and hard work that underpin every cheese they produce.
We were then treated to a behind-the-scenes tour of the cheesemaking process.
The process begins with the production of clean, wholesome, high-quality milk from Lyburn's own home-bred cows. From there, the milk is carefully crafted into curds using traditional techniques and expert knowledge developed over many years! Watching the transformation take place was really amazing!
Perhaps most impressive is the patience required during the maturation process. Depending on the variety, the cheeses are aged anywhere from 10 weeks to an incredible 18 months
During this time, the curds gradually develop their unique textures, flavours, and characteristics, resulting in beautifully matured cheeses that reflect the expertise and dedication of the Lyburn team.
